Suigei Brewing Co., Ltd., established in 1872 in Kochi Prefecture, Japan, has a rich history spanning over 150 years. The brewery, originally named Kichizō, was renamed Suigei, meaning "Drunken Whale," inspired by a historical nickname for a local lord known for his love of sake. Located in Tosa City, Suigei benefits from Kochi’s pristine natural environment, including access to high-quality water from the Niyodo River, one of Japan’s purest water sources. This water is crucial for crafting their signature clean and crisp sakes.
Suigei Junmai Daiginjo Shino is crafted from Yamadanishiki rice from Hyogo Prefecture, polished to 40%. Using two types of kobo yeast and Kagami River spring water, it undergoes slow fermentation at low temperatures in stainless steel tanks. The sake features a Sake Meter Value (SMV) of +2, indicating slight sweetness, with an acidity of 1.5 and 16% alcohol. Yields are low, around 30 hl/ha, with only the aromatic “nakadori” (middle yield) used during pressing. Bottled unfiltered in dark glass to preserve freshness, it’s matured for one year at -10°C, enhancing its refined, aromatic profile.
Suigei Junmai Daiginjo Shino displays a clear, pale straw hue. Its nose is vibrant, with glossy apple, banana, and subtle floral notes, evoking a refined ginjo aroma. On the palate, it’s smooth and elegant, offering ripe pear, melon, and a hint of anise, balanced by crisp acidity and delicate umami. The finish is long, clean, and slightly mineral, with lingering fruit. Best served chilled (10–15°C) in a wine glass, it pairs beautifully with sashimi, grilled fish, or light tempura. This sake’s harmonious complexity makes it ideal for enhancing delicate dishes.
