Domaine Boris Champy in Nantoux is a biodynamic pioneer in Burgundy. Founded in 1984 by Didier Montchovet as the region's first Demeter-certified estate, it was taken over in 2019 by experienced oenologist Boris Champy (ex-Dominus, Clos des Lambrays). Focus on high-altitude terroirs and biodiversity. 100% Chardonnay from the 4ha "Montagne de Cras" parcel at 382m altitude on stony, clay-limestone soils. Biodynamic (Demeter), partial oak vinification, 12 months aging on lees with bâtonnage. Alcohol ~13%. Light gold; aromas of citrus, white flowers, and subtle oak. Creamy texture with lively acidity, dense minerality, saline tension, and long, vibrant finish.
