ABOUT THE WINE


Champagne Paul Déthune is a historic family-owned Récoltant-Manipulant (grower-producer) estate located in the prestigious Grand Cru village of Ambonnay, in the heart of the Montagne de Reims, Champagne, France. The Déthune family’s connection to the land dates back to 1610, with the house officially founded by Paul Déthune in 1930. Today, it is run by Pierre and Sophie Déthune, who continue the tradition of crafting elegant, terroir-driven Champagnes. The estate’s 100% Grand Cru vineyards, renowned for their Pinot Noir, produce rich yet balanced cuvées (often blended with Chardonnay) that reflect Ambonnay’s powerful, red-fruited character. Committed to sustainability, the domaine practices high environmental value (HVE) viticulture, has achieved VDC certification, and completed organic conversion in 2020 (with full certification underway). Visitors can explore its historic 17th-century cellars and enjoy tastings that highlight the family’s passion for quality and nature.
Paul Déthune Blanc de Noirs Le Haut des Bermonts Champagne 2017 (Grand Cru Extra Brut) is a rare single-parcel lieu-dit cuvée. This wine highlights an old-vine Pinot Noir plot (over 50 years old, ~0.73 ha) from “Le Haut des Bermonts,” showcasing the power and finesse of Ambonnay terroir through traditional oak aging. Limited production (~2,000 bottles). 100% Pinot Noir. Vinified and aged in 205L Champagne oak barrels, unfiltered with natural cold settling. ~6 years on lees. Extra-Brut dosage: 5 g/L. Alcohol: ~12.5%. HVE certified, sustainable viticulture, organic conversion completed.


TASTING NOTE:


Dense and concentrated nose with toast, candied apricot, honey, cookie, roasting, and orange marmalade. Aeration reveals brioche, roasted fig, almond, roasted pineapple, blackcurrant, elderberry, wild strawberry, and sweet spices. Soft, fresh palate with creamy effervescence, luscious juicy fruit, pink grapefruit acidity, chalky minerality, salinity, and a slender, vibrant, harmonious finish. Highly gastronomic.
