Ratafia Champenois is crafted using unfermented juice from the Champagne AOC, which is then fortified with either Marc de Champagne (distilled from pressing solids) or Fine de Champagne (made from champagne still wine). This production method serves a dual purpose: Utilizes juice that would otherwise go unused, and creates a unique fortified wine style.
Paul Dethune's Ratafia Champenois presents as a rich, amber-hued fortified wine that showcases the fusion of Pinot Noir grape must with carefully distilled alcohol. The nose reveals a complex aromatic profile featuring notes of stone fruits, particularly plums and Mirabelle plums, complemented by subtle vanilla and white pepper spices.
