Domaine Daniel Dampt & Fils, nestled in the historic village of Milly within Chablis, northern Burgundy, boasts a winemaking legacy spanning over 150 years. Founded through generations of family dedication, the estate traces its roots to the Dampt lineage, with Daniel Dampt merging his domaine with that of his father-in-law, Jean Defaix. Today, sons Vincent and Sébastien Dampt helm operations, blending ancestral traditions with innovative practices. Spanning 30 hectares, including 16 hectares of Chablis and 14 hectares of Premier Cru sites like Vaillons, Fourchaume, Côte de Léchet, Les Lys, and Beauroy, the domaine emphasizes sustainable viticulture. Their state-of-the-art stainless steel cellar, built in 1990, ensures precise production of around 150,000 bottles annually, all estate-grown and bottled to preserve the pure essence of Chardonnay. Renowned for elegant, terroir-driven wines, Domaine Daniel Dampt upholds Chablis's stellar reputation among connoisseurs worldwide.
The 2021 Domaine Daniel Dampt Chablis is a crisp, dry white wine crafted exclusively from 100% Chardonnay grapes, sourced from five parcels of old vines (40-60 years old) encircling the domaine in Milly. These vines thrive on the iconic Kimmeridgian limestone soils of Chablis, rich in fossilized oyster shells, which impart a distinctive mineral backbone. Harvested by hand to optimize ripeness, the grapes undergo gentle pneumatic pressing, followed by cool fermentation in temperature-controlled stainless steel tanks—no oak is used, preserving the wine's vibrant freshness and purity. Aged on fine lees for several months, it achieves a balanced structure without malolactic fermentation.
Pale straw in color with green highlights, the 2021 Domaine Daniel Dampt Chablis bursts with a restrained yet inviting nose of herbaceous green apple, zesty lemon-lime, and wet river stone minerality, underscored by subtle white floral whispers and a hint of honeysuckle. On the palate, it's elegantly structured with a vibrant thread of acidity slicing through juicy pear and citrus pith flavors, delivering a talc-like, chalky grip that evokes the Kimmeridgian terroir. Medium-bodied yet featherlight, the wine unfolds into a saline, steely finish laced with lingering green melon and a touch of honeyed warmth—pure, precise, and refreshingly unadorned.
